Nasi Tomato with Ayam Masak Merah Recipe. Malay Tradition food that will never be forgetten..

Without saying, you can never go to any Open House or known as 'Kenduri' without serving our tradition Malay cuisine; Nasi Tomato and Ayam Masak Merah.

It took me a while to master this unforgotten cuisine and here is how I do it. For a complete set, we have Nasi Tomato, Ayam Masak merah (main dish) and Acar Sayur (salad).

Estimated time to cook...well it can go up to 2 hours in the kitchen!!



Nasi Tomato


Ingredients

3 cups of beras mati/ rice

1/2 cup evaporated milk

2 table spoon of ghee

2 pandan leaves

4 Spices (star annis, cloves, cardamom, cinnamon)

Slice: Red onion, garlic, ginger

1/2 can of Tomato Puree


Wash the rice grain and soak for a while.

In another pan, heat ghee, pandan leaves and spices. Stir fry the red onion, garlic, ginger until all the aroma of the ingredient came out. Add tomato puree into the pan and let it cook for a while. Put all the drained rice grain into the pan and add stir until it become half cook. while waiting for it to be half cook, pour the evaporated milk until it well mix.


Place all the mix rice into the cooking pot and let it cook.

you can sprinkle some baled nuts like cashew nuts and Raisins if you like.



Ayam Masak Merah

Ingredients

1/2 chicken - cut into small pieces (fried with tumaric and salt)

4 Spices (star annis, cloves, cardiment, cinnamon)-

Blend Red onion, garlic, ginger and galangal (lengkuas)

1/2 can of Tomato Puree

2 table spoon of ghee

2 lemon grass (crash)

Chili paste (cili boh)

Gula merah, sugar and Salt

Tomato & Chili Sauce


In a cooking pan, heat ghee, lemon grass and spices. Stir fry the blend ingredient until all the aroma of the ingredient came out. Add chili boh and tomatoo puree and let it cook with a bit of water for at least 15 minutes. Then balance it till Gula merah, sugar and salt and Tomato & Chili Sauce. Add chicken and let it cook for at least 10 minutes.



Acar Sayur


Mix the Ingredients :

Chopped and dice

Red Onion

Carrot

Cucumber

Pineapple

Chili

Sugar, Salt

Vinegar
